Carbonara

Ingredients

  • pancetta 4 oz
  • garlic 3 clove
  • Parmesan 100 g
  • eggs 3 whole
  • pasta 200 g
  • butter 1 tbsp
  • salt, pepper & olive oil 1 pinch

Instructions

    Melt the butter in a frying pan, squash the garlic under a knife, and add it to the butter.

    Fry the pancetta; once cooked, remove the garlic.

    Boil salted water and cook the pasta until al dente.

    Grate the Parmesan and mix it with the eggs.

    Add the drained pasta to the pancetta, keeping some pasta water.

    Off the heat, add the egg mixture and stir; warm on low, stirring, until thickened.

    Season with plenty of black pepper, loosening with pasta water if needed.
