Bolognese

Ingredients

  • olive oil 1 tbsp
  • butter 3 tbsp
  • onions 2 whole
  • carrots 3 whole
  • celery 3 stalk
  • garlic 5 clove
  • ground beef 1.25 lb
  • salt 1 tsp
  • ground nutmeg 0.25 tsp
  • whole milk 1 cup
  • red wine 1 cup
  • chopped tomatoes 28 oz
  • balsamic vinegar 2 tbsp

Instructions

    Heat the olive oil and butter and gently soften the finely chopped onion, carrot, celery, and garlic.

    Add the ground beef with the salt and nutmeg and brown.

    Pour in the milk and simmer until mostly absorbed.

    Add the red wine and simmer until reduced.

    Add the chopped tomatoes and simmer gently 1.5-2 hours, stirring now and then.

    Finish with the balsamic and adjust salt.
