Sweet & Sour Chicken

Ingredients

  • chicken breast 8 oz
  • minced garlic (marinade) 1.5 tsp
  • soy sauce (marinade) 1.5 tsp
  • mirin (marinade) 0.67 tsp
  • cornstarch (marinade) 1 tsp
  • sugar (marinade) 0.5 tsp
  • salt (marinade) 0.25 tsp
  • white pepper (marinade) 0.125 tsp
  • chicken broth (sauce) 0.33 cup
  • black soy sauce (sauce) 2 tsp
  • sesame oil (sauce) 2 tsp
  • rice vinegar (sauce) 2 tbsp
  • ketchup (sauce) 2 tbsp
  • sugar (sauce) 1 tbsp
  • soy sauce (sauce) 2 tsp
  • cornstarch (sauce) 1.5 tsp
  • salt (sauce) 0.25 tsp
  • brown onion 0.5 whole
  • broccoli 1 cup
  • white rice, rinsed 1 cup
  • water (for rice) 1.5 cup
  • chicken broth (for rice) 0.5 cup
  • butter (for rice) 0.5 tbsp

Instructions

    Dice the chicken and toss with the marinade ingredients; rest 15 minutes.

    Cook the rice with the water, chicken broth, butter, and a little salt (Instant Pot: 5 minutes, natural release).

    Whisk together all the sauce ingredients.

    Stir-fry the chicken until golden, then add the onion and broccoli.

    Pour in the sauce and cook until glossy and thickened.

    Serve over the rice.
