Beef Fried Rice

Ingredients
- beef (prepared as Chinese Beef Marinade) 1 lb
- eggs 4 whole
- onion 0.5 whole
- scallions 1 bunch
- carrots 2 whole
- peas 1 cup
- garlic 2 clove
- ginger 2 tsp
- soy sauce 4 tbsp
- salt 0.5 tsp
- uncooked rice (cooked and cooled) 2 cup

Cook the rice ahead and let it cool (day-old is best).

Stir-fry the ginger and garlic about 30 seconds in a hot wok.

Add the onion, carrots, scallions, and peas and stir-fry 1.5-2 minutes.

Add the rice and toss until heated through, about 1 minute.

Add the marinated beef and cook 1 minute.

Push aside, scramble in the eggs, then fold everything together with the soy sauce and salt.
