Chinese Beef Marinade

Ingredients
- beef (thinly sliced) 1 lb
- baking soda 1.5 tsp
- garlic 1 clove
- minced ginger 0.5 tsp
- sesame oil 2 tsp
- rice wine vinegar 1 tsp
- cornstarch 1.5 tbsp
- soy sauce 2 tbsp
- sugar 0.5 tbsp
- white pepper 0.25 tsp
- salt 0.25 tsp
- mirin 1 tbsp
Instructions

Toss the sliced beef with the baking soda and rest 15 minutes, then rinse and pat dry (this velvets the beef).

Mix together the garlic, ginger, sesame oil, rice wine vinegar, cornstarch, soy sauce, sugar, white pepper, salt, and mirin.

Coat the beef in the marinade and let sit at least 30 minutes before stir-frying.
