Ingredients

  • egg white 40 g
  • almond flour 52 g
  • powdered sugar 52 g
  • caster sugar 36 g
  • salt 1 pinch

Instructions

    Whip the egg white with a pinch of salt, adding the caster sugar gradually to a glossy meringue.

    Sift the almond flour and powdered sugar and fold in (macaronage) until the batter ribbons.

    Pipe rounds onto a lined tray and rest until a skin forms.

    Bake at 320°F for 15 minutes. (Ratio egg:almond:powdered:caster = 1:1.3:1.3:0.9; use at least 68g egg white for 2 trays.)
