Ingredients

  • strong white flour 615 g
  • water 430 g
  • instant yeast (1 packet) 7 g
  • salt 1.5 tsp

Instructions

    Mix the flour, water, yeast, and salt and knead 3 minutes.

    Let rise 2.5 hours.

    Shape into baguettes and prove 1 hour.

    Bake at 450°F for 15 minutes with a tray of water for steam, then at 420°F for 25 minutes without (40 minutes total).
