Ingredients
- bacon fat 1.5 tbsp
- salted butter 1.5 tbsp
- yellow cornmeal 0.75 cup
- AP flour 0.25 cup
- buttermilk 1 cup
- egg 1 whole
- baking soda 0.25 tsp
- baking powder 2.5 tsp
- salt 1 tsp
- sugar 1 tbsp

Grease an 8-10 inch skillet with Crisco and preheat the oven to 450°F.

Melt the bacon fat and butter together.

Whisk the cornmeal, flour, baking soda, baking powder, salt, and sugar; whisk in the buttermilk and egg.

Stir 2/3 of the melted fat into the batter and pour the rest into the hot skillet.

Pour the batter into the skillet and bake at 425°F for about 20 minutes until golden.
