Chipotle Chili

Ingredients

  • garlic 3 clove
  • medium onions 2 whole
  • small green bell peppers 2 whole
  • ground beef 1 lb
  • brown sugar 3 tbsp
  • chili powder 2 tbsp
  • cumin 1 tsp
  • paprika 1 tsp
  • cocoa 1 tbsp
  • garlic powder 0.5 tsp
  • black pepper 0.5 tsp
  • salt 0.5 tsp
  • can kidney beans 15 oz
  • can diced tomatoes 28 oz
  • beef stock 12 oz
  • chipotles (plus the adobo sauce from the can) 2 whole
  • unsweetened chocolate (100%) 0.5 oz
  • red wine vinegar 4 tbsp

Instructions

    Brown the ground beef in a large pot and set aside.

    Soften the onions, garlic, and bell peppers in the same pot.

    Stir in the brown sugar, chili powder, cumin, paprika, cocoa, garlic powder, pepper, and salt and cook a minute until fragrant.

    Add the beef back with the diced tomatoes, kidney beans, beef stock, chipotles and their sauce, and the unsweetened chocolate.

    Simmer 45-60 minutes until thickened.

    Finish with the red wine vinegar and adjust salt.
