Mac & Cheese Casserole

Ingredients
- butter 2 oz
- flour 1.5 oz
- milk 800 ml
- cheese (colby/monterey blend) 250 g
- cheese (for topping) 50 g
- pasta 300 g
- salt 0.5 tsp
- garlic powder 0.125 tsp
- onion powder 0.125 tsp
Instructions

Cook the pasta until just under done and drain.

Melt the butter, whisk in the flour, and cook the roux a minute.

Gradually whisk in the milk; add the salt, garlic powder, and onion powder and cook until thickened.

Stir in the 250g cheese until smooth, then fold in the pasta.

Tip into a baking dish, top with the 50g cheese, and bake at 375°F until bubbling and golden.
