Mac & Cheese Casserole
Baked mac and cheese done right — a silky cheddar-jack béchamel folded through pasta and finished under a bubbling, golden cheese crust.

- Butter 2 oz
- Flour 1 ½ oz
- Milk 800 ml
- Cheese colby/monterey blend 250 g
- Cheese for topping 50 g
- Pasta 300 g
- Salt ½ tsp
- Garlic powder ⅛ tsp
- Onion powder ⅛ tsp
Instructions

Cook the pasta until just under done and drain — it finishes cooking in the oven.

Melt the butter, whisk in the flour, and cook the roux a minute until it smells nutty.

Gradually whisk in the milk; add the salt, garlic powder, and onion powder and cook until thick enough to coat the back of a spoon.

Stir in the 250g cheese off the heat until smooth, then fold through the pasta.

Tip into a baking dish, top with the 50g cheese, and bake at 375°F until bubbling and golden.
