Mac & Cheese Casserole

Ingredients

  • butter 2 oz
  • flour 1.5 oz
  • milk 800 ml
  • cheese (colby/monterey blend) 250 g
  • cheese (for topping) 50 g
  • pasta 300 g
  • salt 0.5 tsp
  • garlic powder 0.125 tsp
  • onion powder 0.125 tsp

Instructions

    Cook the pasta until just under done and drain.

    Melt the butter, whisk in the flour, and cook the roux a minute.

    Gradually whisk in the milk; add the salt, garlic powder, and onion powder and cook until thickened.

    Stir in the 250g cheese until smooth, then fold in the pasta.

    Tip into a baking dish, top with the 50g cheese, and bake at 375°F until bubbling and golden.
