Ingredients

  • plain flour 120 g
  • caster sugar 140 g
  • baking powder 1.5 tsp
  • unsalted butter 40 g
  • whole milk 120 ml
  • egg 1 whole
  • salt 1 pinch
  • vanilla 0.25 tsp

    Heat the oven to 350°F and line a 12-hole tin.

    Cream the butter and caster sugar, then beat in the egg, milk, and vanilla.

    Fold in the flour, baking powder, and salt.

    Divide between the cases and bake about 18-20 minutes.

    Variations: for chocolate, add 20g cocoa to the batter; for lemon, use 150g flour with 2 Tbsp lemon zest in place of the vanilla. Frost with a buttercream of 250g icing sugar, 80g butter, and 25ml milk (add 40g cocoa for chocolate, or 2 Tbsp lemon zest for lemon).
