Beef Teriyaki

Ingredients
- beef (thinly sliced) 1 lb
- soy sauce 0.25 cup
- brown sugar 0.25 cup
- mirin 0.25 cup
- rice wine vinegar 1 tbsp
- garlic 2 clove
- fresh ginger (or 1/2 tsp ground) 1 tbsp
- sesame oil 0.5 tbsp
- sesame seeds 0.5 tbsp
- cornstarch 2 tsp
- baking soda 1.5 tsp
- oyster sauce 1 tsp
- MSG (umami seasoning) optional 0.5 tsp

Toss the sliced beef with the baking soda and let sit 15 minutes (this tenderizes it), then rinse and pat dry.

Whisk together the soy sauce, brown sugar, mirin, rice wine vinegar, garlic, ginger, sesame oil, oyster sauce, and MSG. Set aside 3 Tablespoons of this sauce for the meat.

Sear the beef in a hot pan until browned.

Add the remaining sauce and simmer until it coats the beef. Thicken with the cornstarch mixed into a little cold water.

Finish with the sesame seeds.
