Basic Tomato Soup

Ingredients

  • diced tomatoes (3 x 14.5 oz cans) 43.5 oz
  • onion 1 whole
  • garlic 2 clove
  • carrots, grated 2 whole
  • red pepper flakes 0.125 tsp
  • butter 1.5 tbsp
  • olive oil 1.5 tbsp
  • dried basil 1 tsp
  • chicken broth 2 cup
  • salt 0.5 tsp
  • sugar 1.5 tsp
  • pepper 0.25 tsp
  • red wine or balsamic vinegar 2 tsp
  • Parmesan 0.33 cup

Instructions

    Warm the olive oil in a pot and melt in the butter.

    Add the red pepper flakes and cook 30 seconds.

    Add the onion and grated carrot and cook about 6 minutes.

    Add the garlic and basil and cook 1 minute.

    Stir in the tomatoes, chicken broth, sugar, salt, and pepper. Bring to a boil and simmer 1 hour.

    Blend until smooth with the Parmesan.

    Finish with the vinegar and season to taste.
